I'm sure they've had a lot of experience with dogs: this area is an interesting situation, with densely housed neighborhoods on one side and thousands of acres of chaparral and grassland on the other. Some of the coyotes here are huge, too: it wouldn't surprise me if they were hybrids.
Re: your dogs+coyote interactions-- that would have to be one mellow borzoi, though, right? Considering what they were bred for. Imagine the coyotes' surprise: like a guy in a "fast" plane being buzzed by an F-15!
