As to the cat show, it's a lot like a dog show, except they don't run the cat around the ring. Getting the cat to move naturally lets them see that everything is connected correctly and moves evenly. Also check reflexes, sort of like a doctor tapping your knee.

The picture of the hairless vs the furred cat illustrates just how much is hidden under the floof. So hands lets them make sure body is good under the floof. That weird posture of picking up the cat lets them check the spine is straight and also lets the judge feel the internal organs at same time.

As to the classes and what the ribbons all mean, don't know.
